Pollo con Espinacas y Queso
Chicken with spinach and cheese is a quick delicious dinner. I cut up some onion and a piece of rotisserie chicken then put them in a skillet with a little butter or oil. Cover and cook for five minutes or so. When the onion is tender and starting to brown stuff as much baby spinach into the skillet as you can and put the lid back on.After a minute or two toss the spinach with some tongs and put the cover on until the spinach is all wilted. Remove from heat and sprinkle a little cheese on top.Cover while you find a plate and the cheese will melt before you get back.Season to taste and enjoy.

ReplyDeleteI made something similar tonight. Chicken legs with roasted kale, cauliflower and onions. Toss the veggies with olive oil, salt and pepper, throw in a big roasting pan, lay the chicken, skin side up, on top, sprinkle some paprika on the chicken to make it pretty, cook at 450 for about 20 minutes covered with foil and another 20 minutes uncovered, or until the chicken's done to your liking. Yum.

Thanks everyone. Meredith, you are right pollo is chicken. I wasn't trying to be pretentious it's just that the first time I had this I was in a Mexican Restaurant.(Mine is better)
